Dubu Kimchi
A very clumsy picture of a very tasty dinner: dubu kimchi. When I’ve had this at restaurants, it’s sooo much better than the sum of its parts that I always wonder what the secret is, but it seems like there isn’t one. I followed this recipe from My Korean Kitchen and it was easy and perfect. Simple too—just fancy kinugoshi tofu (doesn’t it look like lovely burrata?), a bit of pork shoulder (optional), kimchi, and a handful of pantry ingredients. Yum.
