Just like her brother, even if she'd kill you if you said this in her presence, Summer is very often attention-starved. She might be Beth's favourite, her parents' choice when it comes to picking between her and Morty, but it doesn't mean that she gets more than the bare minimum. Or that she gets said attention on a regular basis.
So, while she might get easy crushes on popular / good-looking people like most teenagers, the real way to win her heart is to show genuine interest in her. Be it by making time to spend time with her, listening to her bitching about her family, taking her out / letting her take you out, or even just sitting together during lunch break and chatting.
To sum it up, what wins her over is being there for her. Not her as an obligatory choice between two, not her as Rick's granddaughter or Morty's sister. Her as Summer Smith, independently from her family and other connections.
This is the reason why she's friends with Nancy, in spite of what she says and how she treats the other girl at times. Nancy likes Summer for Summer and she gives her attention, without demanding anything in return, not even the same treatment.
Summer loves gifts. Beth and Jerry have never been great at providing emotional support and attention to their children, but they have always made sure that they had everything they needed from a material point of view. Food, clothes, presents (no matter how lame) on their birthday and for the holidays.
So, both Morty and Summer have grown up with the unconscious ideas that "presents = love". Nowadays, they both know that the equation isn't valid, but it's still something well-rooted in their subconscious. While Morty has started to get over it, thanks to Rick's (unhealthy, demanding, twisted) attachment and attention, Summer hasn't really had a chance to do the same yet.
So, if you want to get in her good graces? Woo her? Get her to crush on you? Turn her into a loyal friend? Buy or make her stuff. She likes cool clothes and jewels the most, but anything works. Make-up, flowers, body / hair products, books she could like, tickets to a concert, even just the invitation to some popular party. You name it.
There's a part of her that's aware of how easily she "sells" herself at times, and she also knows how vulnerable this can make her. Yet, she dismisses it as something she can deal with, something she's tough enough to face. It's easier than digging out the roots of why she's turned out this way.
