Delish, gluten-free blueberry muffins with lemon zest! The organic berries are from Blue Tara farm in Mississippi, of course. I was inspired by Gluten Free Girl’s wonderful muffin mix recipe. Make your own mix from the GF flours you prefer, and when you’re ready to bake it’s as simple as oil, milk, eggs, mix-ins, GO! One final thought - if you have the time, make this batter at night and leave it in the fridge until morning. It allows the flours to fully hydrate, so you get a tender muffin that rises to great heights. Also, warm muffins for breakfast with as little work as possible? YUM!!!
