Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup cold unsalted butter, cubed. 1/4 cup ice water. 1 cup ricotta cheese. 1/2 cup grated Pecorino Romano cheese. 1/2 cup grated Parmesan cheese. 4 large eggs. 1/4 cup chopped fresh parsley. 1/4 cup chopped fresh basil. 1/4 cup chopped fresh oregano. 1/2 cup diced prosciutto. 1/2 cup diced salami. 1/2 cup diced ham. 1/2 cup diced provolone cheese. Salt and pepper to taste.
Instructions: In a food processor, combine the flour and cubed butter until it resembles coarse crumbs. Slowly add the ice water and pulse until the dough comes together. Form it into a disk, wrap in plastic wrap, and refrigerate for 30 minutes. Preheat your oven to 375F 190C. In a large bowl, mix together the ricotta, Pecorino Romano, Parmesan, eggs, parsley, basil, oregano, prosciutto, salami, ham, provolone, and season with salt and pepper. Roll out the chilled dough into a 12-inch round and place it in a greased 9-inch pie dish. Pour the filling mixture into the pie dish. Cover the filling with another rolled-out piece of dough, sealing the edges. Cut a few slits in the top crust to allow steam to escape. Bake for 45-50 minutes until golden brown and set.
