This vegan apple pie made in a slow cooker is a tasty dessert that doesn't take much work. The slow cooker does all the work, and the end result is soft apples with warm spices and a flaky crust.
Ingredients: 6 apples, peeled, cored, and sliced. 1/2 cup brown sugar. 1 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1 tablespoon lemon juice. 2 tablespoons cornstarch. 1 tablespoon water. 1 store-bought vegan pie crust.
Instructions: In a bowl, mix sliced apples, brown sugar, cinnamon, nutmeg, and lemon juice. In a small bowl, dissolve cornstarch in water, then add to the apple mixture. Stir well to combine. Line the slow cooker with parchment paper or spray with non-stick spray. Place one pie crust in the bottom of the slow cooker, trimming the edges if necessary. Pour the apple mixture over the crust. Cover the apple mixture with the second pie crust, trimming edges if needed and making slits in the top crust for steam to escape. Cover the slow cooker and cook on low for 4-5 hours or until the apples are tender and the crust is golden brown. Once done, carefully remove the pie from the slow cooker using the parchment paper or a spatula. Let it cool slightly before serving. Enjoy!
