This Slow Cooker Vegetable Biryani is a tasty and fragrant dish made with basmati rice, a mix of vegetables, and fragrant spices. This is a simple and handy way to enjoy this traditional Indian dish.
Ingredients: 2 cups basmati rice, rinsed and drained. 3 cups mixed vegetables carrots, peas, bell peppers, cauliflower. 1 onion, thinly sliced. 2 tomatoes, chopped. 1/4 cup yogurt. 2 tablespoons biryani masala. 1 tablespoon ginger-garlic paste. 1 cinnamon stick. 4 cloves. 2 cardamom pods. 1 bay leaf. 1/4 cup chopped cilantro. 1/4 cup fried onions optional. Salt to taste. 2 cups vegetable broth or water. 2 tablespoons ghee or oil.
Instructions: In a slow cooker, layer half of the vegetables, followed by half of the rice. Sprinkle half of the sliced onions, tomatoes, biryani masala, ginger-garlic paste, cinnamon stick, cloves, cardamom pods, bay leaf, cilantro, and fried onions. Repeat the layers with the remaining vegetables, rice, onions, tomatoes, biryani masala, ginger-garlic paste, cinnamon stick, cloves, cardamom pods, bay leaf, cilantro, and fried onions. Mix yogurt with vegetable broth or water and pour over the layers. Add salt to taste. Drizzle ghee or oil on top.
