These Bacon Cheddar Patty Cakes are a delicious way to repurpose leftover mashed potatoes. They are crispy on the outside, soft on the inside, and packed with savory flavors from bacon and cheddar cheese.
Ingredients: 2 cups leftover mashed potatoes. 1/2 cup cooked and crumbled bacon. 1/2 cup shredded cheddar cheese. 1/4 cup chopped green onions. 1/4 cup all-purpose flour. 1 egg, beaten. Salt and pepper to taste. 2 tablespoons vegetable oil.
Instructions: Put mashed potatoes, bacon, cheddar cheese, green onions, flour, egg, salt, and pepper in a large bowl. Mix well until everything is well mixed. Take about 1/4 cup of the mixture and shape it into small patties. Place them on a plate or tray. Put oil in a pan and heat it over medium-low heat. Put the patties in the pan with care, and cook them for three to four minutes on each side, or until they are golden brown and crispy. When the patties are done, take them out of the pan and put them on a plate lined with paper towels to drain the extra oil. Add more green onions or your favorite dipping sauce on top and serve hot.
