A delightful gluten-free twist on the classic king cake, these pinwheels are filled with a sweet cinnamon sugar mixture, baked until golden brown, and topped with a colorful glaze and Mardi Gras sprinkles.
Ingredients: 1 package of gluten-free puff pastry dough such as gfJules. 1/2 cup brown sugar. 2 teaspoons ground cinnamon. 1/4 cup finely chopped pecans. 1/4 cup raisins. 2 tablespoons melted butter. 1 cup powdered sugar. 2 tablespoons milk. Green, purple, and yellow sprinkles for decoration.
Instructions: Turn on your oven and heat it up to 375F 190C. The gluten-free puff pastry dough should be rolled out into a rectangle shape. Chopped pecans, raisins, and brown sugar should all be mixed together in a small bowl. Melt the butter and brush it over the rolled-out dough, leaving an inch of space around the edges. Spread the sugar and spice mix out evenly on top of the dough that has been buttered. Roll the dough into a log shape starting from one of the long edges. Cut the log into slices that are about an inch thick. Leave space between each slice when you put them on a baking sheet that has been lined with parchment paper. After the oven is hot, bake for 15 to 20 minutes, or until golden brown and puffed. Add the powdered sugar and milk to the milk and mix it together to make a glaze. After the pinwheels are done, let them cool for a while and then add the glaze on top. Put green, purple, and yellow sprinkles on top while the glaze is still wet. These are traditional Mardi Gras colors. Enjoy while still warm!
