Quick and Easy Sushi Bake
This colorful sushi is a lot of fun for kids to make and eat. It's fun and interactive, and even picky eaters will enjoy it because it's easy to put together and full of their favorite foods.
Ingredients: 2 cups sushi rice. 2 1/2 cups water. 1/4 cup rice vinegar. 2 tablespoons sugar. 1 teaspoon salt. Nori seaweed sheets. Assorted fillings: avocado, cucumber, imitation crab, carrot, cream cheese, etc.. Soy sauce, for dipping. Pickled ginger, for serving. Wasabi, for serving.
Instructions: Run cold water over the sushi rice until the water is clear. Put rice and water in a rice cooker. Follow the directions that come with the rice cooker. Melt the sugar, salt, and rice vinegar in a small saucepan over low heat. Wait for it to cool down. Put the cooked rice in a large bowl and add the vinegar mixture. It should be mixed in well. Wait until it's cool enough to touch. On a bamboo sushi mat, lay a nori sheet with the shiny side down. Leave an inch of space at the top of the sushi rice and spread it out thinly over the nori. Line up the fillings along the bottom edge of the rice. Use the bamboo mat to roll the sushi up tightly, and then press gently to seal. With a sharp knife, cut the roll into small pieces that are easy to eat. Soy sauce, pickled ginger, and wasabi should be served with it.
