Some crispy falafel waffles come with a colorful and refreshing tomato salad. These are a mix of Middle Eastern flavors. This creative waffle recipe is a tasty change from regular falafel. It combines the health benefits of chickpeas, fresh herbs, and spices into an easy-to-make waffle.
Ingredients: 1 cup chickpea flour. 1/2 cup water. 1 cup canned chickpeas, drained and rinsed. 1/4 cup fresh parsley, chopped. 1/4 cup fresh cilantro, chopped. 1/2 small red onion, finely chopped. 2 cloves garlic, minced. 1 tsp ground cumin. 1/2 tsp ground coriander. 1/4 tsp cayenne pepper adjust to taste. Salt and pepper to taste. 1/2 tsp baking powder. 2-3 tbsp olive oil for waffle iron. For the Colorful Tomato Salad:. 2 cups cherry tomatoes, halved. 1/2 cucumber, diced. 1/4 red onion, thinly sliced. 1/4 cup fresh parsley, chopped. 1/4 cup fresh mint leaves, chopped. 2 tbsp olive oil. 1 tbsp lemon juice. Salt and pepper to taste.
Instructions: In a large mixing bowl, combine chickpea flour and water. Mix well to form a smooth batter. In a food processor, add canned chickpeas, fresh parsley, fresh cilantro, red onion, minced garlic, ground cumin, ground coriander, cayenne pepper, salt, and pepper. Pulse until a coarse mixture forms. Add the chickpea mixture to the batter and stir to combine. Let it sit for 15 minutes to allow the flavors to meld. Preheat your waffle iron according to the manufacturer's instructions and brush with olive oil to prevent sticking. Stir baking powder into the falaffelwaffeln batter just before cooking. Pour a portion of the batter onto the waffle iron and cook until golden brown and crispy, following the waffle iron's instructions. Repeat with the remaining batter. While the falaffelwaffeln are cooking, prepare the Colorful Tomato Salad. In a mixing bowl, combine cherry tomatoes, diced cucumber, red onion, fresh parsley, and fresh mint leaves.
