The vegan lentil soup is easy to make, doesn't take long, and tastes great. Great for a cozy dinner during the week or for making meals ahead of time.
Ingredients: 1 cup dried lentils. 4 cups vegetable broth. 1 onion, diced. 2 carrots, diced. 2 celery stalks, diced. 2 cloves garlic, minced. 1 teaspoon ground cumin. 1 teaspoon paprika. 1/2 teaspoon dried thyme. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Toss in the chopped onion, carrots, and celery. For about 5 minutes, or until softened, saut. Ground cumin, paprika, dried thyme, salt, and pepper should be added. Go on and cook for two more minutes. Add the vegetable broth and dried lentils. Bring up the temperature. Turn down the heat, cover, and let it cook for 20 to 25 minutes, or until the lentils are soft. Check the seasoning and make changes if needed. Enjoy while hot!
