Two years ago, if I was asked to make dinner, it would have been something easy. Pasta. Burgers. Mac-n-Cheese. That was the depth of my culinary talent. My wife, on the other hand, was brilliant at putting together meals from whatever we had in hand. But, since taking on the household duties a year ago, I’ve found a level of culinary creativity I never knew I had. Tonight, I made pan-fried garlic & basil polenta with an avocado and sun-dried tomato crema, and served it with a lemon and dill infused rice with wilted kale and jalapeños. OMG was it good!
