Hello~ Eggscuse me! Now that I’ve gotten your attention, here’s the 2nd part of my mini-egg-research series. This post might be more useful to those of you that would like some egg-purchasing advice :) I’ll be answering the 2 questions below:

1. What do the different egg grades mean?
You might have seen USDA grade shields with “grades” such as AA, A, or B on some egg cartons but not others. The USDA egg grading program establishes a baseline for quality, and a USDA grade shield is placed on the cartons of eggs that have been graded by a trained USDA grader. This program is a voluntary service paid for by egg producers, but presents a great benefit for consumers –by purchasing a carton of eggs that is “graded” with a USDA shield, you can be confident that your eggs are in compliance with the quality that the USDA has identified them with. For eggs that do not use the USDA grading service, they are not eligible to contain the USDA shield.
Egg quality specifications are based on the condition of the shell and interior contents of the egg (air cell—smaller is better, egg white, and yolk). There are 3 different consumer grades:
Grade AA denotes the freshest and highest quality eggs. These eggs have a clean and unbroken shell, very small air cell, clear and firm egg white, and a slightly defined egg yolk free of defects.
Grade A denotes very high quality eggs. These eggs have the same characteristics as a Grade AA egg, but with a “reasonably firm” egg white and an egg yolk that is fairly well-defined.
Grade B denotes eggs that are better used for making liquid, frozen, or dried egg products depending on the number of defects. These eggs have a clean to slightly stained shell, notable air cell size, clear but slightly weak egg white, and a well-defined yolk that may be slightly enlarged and flattened.

2. How do I purchase the freshest eggs?
When buying eggs, it is important to first make sure that they come from a refrigerated case. The easiest way to tell if your eggs are fresh is to check the “Best By” or “Sell By” date on the case. If your case doesn’t contain either of these dates, another way to check for freshness is to look for the “pack date” on the side of the carton. This number is a three-digit code that represents each day of the year starting with January 1st as 001 and ending with December 31st as 365. With this number, you can calculate the “Sell By” date as 30 days after the “pack date”, or the “Best By” date as 45 days after the “pack date”. Since the “Sell By” date has a smaller time frame, you should buy eggs within this date before buying eggs within the “Best By” date. After you find your desired case, check to make sure the eggs inside have clean, uncracked shells.
If you already have eggs sitting in your refrigerator but are unsure if they are still fresh to use, here are some ways you can determine their freshness:
Put the egg in a glass of water. If it sinks, your egg is considered fresh and good to go! As an egg becomes older, more air enters through the porous egg shell, causing the old egg to float.
Crack the egg open and take a look. A fresh egg will have its yolk and egg white “sitting up”, with the thick egg white closely surrounding the yolk. Old eggs will have a flat yolk that breaks easily, and a thin, watery egg white that spreads over a wide area.

“So Humpty,” Kendra said curled up on the couch between stories with her little mocha.
“What about him?” Rosaline asked sipping on her tea before her next appointment.
“Exactly how fuckable do you find him?” Kendra asked with a slight smirk.
Rosaline spit out her tea and started to cough. “Why would you even ask me that?!” Rosaline said finally.
Kendra shrugged. “Curiosity.”
The younger lady glared at her. “Well you’ll just have to deal. I’m not answering that question.”
“Well the ask says you are so….stop being a tsundere little shit and cough it up.”
Rosaline glared, sighed, rolled her eyes, turned red and eventually said, “Like at eight.”
Kendra raised a brow. “Not going 10/10.”
Rosaline turned more red. “Shut up it’s my opinion.”
Kendra rolled her eyes. “Whatever. It’s not my feelings you’re hurting. What about the other one?”
Rosaline grumbled at Kendra comment mentally lifting her answer to reflect a more accurate opinion. “Dumpty? Like a six? He looks kinda like a doll.”
“He really does doesn’t he. I called him a pretty boy.”
“Yeah I heard. That thread is all mun has been talking about.”
“Yeah…..”
Rosaline grinned. “Well you snogged him so what do you think.”
“I was drunk.”
“And?”
“And…..wow there is no come back to that that doesn’t make me sound horrible so…like a seven maybe an eight under the right circumstances.”
“I thought he wasn’t your type.”
“He’s not. I’m not super into extremely gay looking boys like yours.”
“He is not gay looking!”
Kendra just stared at her.
Rosaline went back to her tea.
“But I don’t know. I like him enough. And since I suppose I ought to do both Humpty’s like a six. He’s good looking and all I just don’t really know him all that well. I only stole their cereal that one time.”
“Wait you did what?”
“I stole their cereal. How have you not heard that story?”
The twins stood on either side of the large entryway to the sitting room. They had been wandering by, and just so happened to stop to listen to the ladies’ conversation.
Δ “Why would the Boss’s daughter think you’re a 10?” Dumpty whispered across the way.
Ⱶ “Why wouldn’t she!? I mean, 8 is good for some, faceless, but....me?!” His twin was clearly under the asumption they both would rate him with top scores. “Snogged?”
Δ “I think she means the kiss.”
Ⱶ “She kissed you??”
Δ “Lets not discuss it, I’d rather no one remember that.”
Ⱶ “Wait so you got essentially the same score as me with her? How does that make sense.”
Δ Dumpty just shrugged.
Ⱶ “A SIX!?!” Humpty stepped out into the doorway and questioned loudly the clear injustice to his person.
