These Homemade Eggnog Marshmallows are a festive and delicious treat perfect for the holiday season. Made with the flavors of eggnog and nutmeg, they are a delightful addition to hot cocoa or a standalone sweet treat. Share them as a Christmas food gift and spread holiday cheer!
Ingredients: 3 envelopes 21g unflavored gelatin. 1/2 cup 120ml cold water. 2 cups 400g granulated sugar. 1/2 cup 120ml light corn syrup. 1/4 cup 60ml water. 1/4 cup 60ml eggnog. 1/4 teaspoon salt. 1/2 teaspoon vanilla extract. 1/2 teaspoon ground nutmeg. Powdered sugar, for dusting.
Instructions: In a mixing bowl, combine the gelatin with 1/2 cup of cold water. Let it sit to bloom for about 10 minutes. In a medium saucepan, combine the granulated sugar, corn syrup, and 1/4 cup of water. Cook over medium heat, stirring until the sugar has dissolved. Insert a candy thermometer and let it reach 240F 115C. Once the sugar syrup reaches 240F 115C, remove it from the heat. With the mixer on low speed, slowly pour the hot sugar syrup into the bloomed gelatin. Be cautious as the syrup is extremely hot. Increase the mixer speed to high and whip the mixture for 10-12 minutes, or until it becomes thick and fluffy. Add the eggnog, salt, vanilla extract, and ground nutmeg to the mixture. Whip for an additional 2-3 minutes until well combined. Grease a 9x13-inch 23x33cm baking dish and dust it with powdered sugar. Pour the marshmallow mixture into the prepared dish and smooth the top with a spatula. Dust the top with more powdered sugar and let it sit at room temperature for at least 4 hours, or until the marshmallows have set. Once set, cut the marshmallows into squares or desired shapes and dust with additional powdered sugar to prevent sticking.
