These Eggnog Marshmallows are a delightful holiday twist on the classic treat. They are infused with the warm and comforting flavors of eggnog, nutmeg, and cinnamon. Perfect for snacking, gifting, or adding to your hot cocoa for a festive touch.
Ingredients: 3/4 cup eggnog. 3 envelopes 21g unflavored gelatin. 2 cups granulated sugar. 1/2 cup light corn syrup. 1/4 teaspoon salt. 1 teaspoon vanilla extract. 1/2 teaspoon ground nutmeg. 1/4 teaspoon ground cinnamon. Powdered sugar, for dusting.
Instructions: Place half a cup of eggnog into a mixing bowl and then top with the gelatin. Give it ten minutes to bloom. The remaining 1/4 cup of eggnog, granulated sugar, corn syrup, and salt should all be combined in a saucepan. Stirring constantly, cook over medium-high heat until the sugar dissolves. When it begins to boil, put an end to stirring and continue cooking until a candy thermometer registers 240F 115C. After turning off the heat, carefully add the sugar syrup to the gelatin mixture while stirring constantly. To the mixture, add the ground nutmeg, ground cinnamon, and vanilla extract. Beat on high speed for 10 to 12 minutes, or until the mixture gets fluffy and thick. Dust a 9 x 13-inch baking dish with powdered sugar and line it with parchment paper. Using a spatula, level the top of the marshmallow mixture after pouring it into the prepared dish. Add a little more powdered sugar on top. Allow the marshmallows to cure for at least four hours, or over night, at room temperature. Once the marshmallows are set, cut them into squares or other shapes with a sharp knife or powdered sugar-dusted cookie cutters. To keep the cut marshmallows from sticking, dust them with extra powdered sugar. Savor your homemade eggnog marshmallows with your preferred hot beverage or as a sweet treat!
