Sweet potatoes are cooked until tender in the slow cooker, then topped with seasoned grass-fed ground beef and an array of delicious Paleo toppings. It's a satisfying and customizable meal perfect for gatherings or weeknight dinners.
Ingredients: 6 medium sweet potatoes. 1 lb grass-fed ground beef. 1 tbsp olive oil. 1 onion, diced. 2 cloves garlic, minced. 1 tsp chili powder. 1/2 tsp paprika. 1/2 tsp cumin. Salt and pepper to taste. Optional toppings: avocado, salsa, chopped green onions, diced tomatoes, compliant bacon, coconut yogurt.
Instructions: Wash the sweet potatoes thoroughly and pierce each with a fork. Place sweet potatoes in the slow cooker. Cook on low for 6-8 hours or on high for 3-4 hours, or until tender. In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, saut until softened. Add ground beef, chili powder, paprika, cumin, salt, and pepper. Cook until beef is browned.
