The Vegan BLT with Eggplant Bacon is a tasty and filling plant-based take on the original BLT sandwich. Smoked eggplant slices that taste and feel like bacon are used to make this delicious sandwich. Ripe tomatoes, fresh lettuce, and creamy vegan mayonnaise finish it off.
Ingredients: 1 large eggplant, thinly sliced lengthwise. 2 tablespoons soy sauce. 1 tablespoon maple syrup. 1 teaspoon liquid smoke. 1 teaspoon smoked paprika. 1 teaspoon garlic powder. 1 tablespoon olive oil. 8 slices whole grain bread. 1 ripe tomato, sliced. 1 cup lettuce leaves. Vegan mayonnaise, to taste.
Instructions: Warm the oven up to 190C 375F. Blend soy sauce, maple syrup, liquid smoke, smoked paprika, garlic powder, and olive oil in a small bowl. This will make the marinade. Brush the eggplant slices with the marinade on both sides, then put them on a baking sheet that has been lined with parchment paper. If you want the eggplant slices to get crispy and brown, bake them for 15 to 20 minutes and flip them over halfway through. Toast the bread until it turns golden brown in a toaster or a pan. Vegan mayonnaise should be spread on one side of each piece of toast. Put eggplant bacon, tomato slices, and lettuce leaves between two slices of toast to make a sandwich. On a diagonal, cut the sandwiches in half and serve them right away.

FINALLY!!!!! I learned from someone else that there is one place in my whole city that sells the Just Egg. They charge an arm and a leg for it too compared to stores in other cities that have it stocked but I had to buy it one time just to try it. Iāve had it twice so far. Yesterday I had it seasoned like I would regular eggs with a side of Lightlife meatless sausage and it was ok, but not mind blowing. This morning I had it this time with the recommended addition of black salt and it really does make a world of difference. I ate it with a side of eggplant bacon which, was also my first time trying. Would I buy this again? Sure, maybe not at a high price point. Is it something I would eat all the time? Probably not, but it helps with the craving of occasionally wanting a scrambled egg. Do not forget the black salt. #breakfast #friday #justegg #lightlife #eggplantbacon #yummy #plantbased #instafood #veganfoodporn #thevegswitchup #seasonyourfood https://www.instagram.com/p/Bt55F5iAlzi/?utm_source=ig_tumblr_share&igshid=1w3s3einy36j0
