Dousan Vinepod Cakes in Swiftbread
We begin the Darkening with food from the searing Crystal Sea, the vast desert in which the Dousan clan of Gelflings reside.
The Dousan are a shamanic clan that venerates the endless cycle of life and death. Knowing for mounting Crystal Skimmers (giant flying green stingrays) and speaking to Thra through hallucinogenic berries, called urdrupes, this clan was feared and marginalized by the Skeksis for alleged death worship and barred from serving them at the Crystal Castle.
What kind of foods would a desert dwelling shaman eat? Why, something spicy, quick, and portable. And as meat would be a bit harder to come by and preserve in the desert, unless one wanted jerky, I have chosen to make this dish vegetarian. If any of you want it vegan, you can substitute the pita for a vegan one (not all of them are) and the plain Greek yogurt and mayonaise for vegannaise and plain dairy-free yogurt.
This is a recipe for a party of 4 Gelflings.

INGREDIENTS:
4 whole wheat pita loaves
1 lb fake-meat grounds (I used Lightlife, but Beyond makes good grounds as well. Mmm, pea protein)
2 Scallions
8 tbsp red pepper hummus
1 tbsp olive oil
2 cups of shredded cabbage
1 bell pepper (any color) (chopped)
1 pickling cucumber (chopped)
1/2 Onion (chopped)
2 tbsp garam masala
1 tsp garlic powder
1/2 tsp chili powder
1/4 tsp chili flakes
SAUCE:
2 tbsp greek yogurt
1 tbsp lite mayo
1/2 tsp sriracha sauce
1 tbsp lime juice
1/2 tsp sesame oil
METHOD:
Chop your onions bell pepper, cucumber, and onion into chunks. Combine bell pepper and cucumber in a bowl. Place onions in a separate bowl. Add 2 cups of shredded cabbage to the cucumber and pepper mix. Using scissors, slices your scallions into the cabbage/pepper/cucumber mix and set aside.
Remove your fake meat grounds from the package and place in bowl. Add your garam masala, garlic powder, chili powder, and chili flakes.
Knead together until the spices are evenly incorporated into the fake meat. Divide your fake-meat lump into twelve triangles, by making twelve small balls, flattening them, and pinching their sides until they look like this:
After forming your vinepod cakes, heat 1 tbsp olive oil over medium heat. When hot, add the onions and saute until the onions are translucent a little brown. Remove onions from the pan and place in a paper towel to remove excess oil.
For the sauce, combine 2 tbsp Greek yogurt, a half tsp sesame oil, a half tsp sriracha and a tbsp mayo. Stir until well mixed.
Heat the pan to medium heat (add a little more oil, if necessary). Add your vinepod cakes and cook until browned, turning every couple minutes. This should take 4-6 minutes, depending on how think you made the cakes. Remove them from the pan and place them in a paper towel to remove the excess oil. They should look like this when finished:
Wrap 4 pitas in a damp paper towel, place them on a plate and microwave them for 45 seconds. (This imbues them with a moist, fresh-from-the-oven taste). Cut a hole in the top of each pita. Smear 2 tablespoons of hummus on the inside of each pita as well as a tbsp of the yogurt sauce. Divide the sauteed onions evenly among each pita and place them in pitas. Put an even portion of vegetable mixture in each pita. Add three vinepod cakes to each pita. If you’re fancy like me, paint the Dousan clan’s emblem in yogurt sauce on the front of each pita with a fork.
