Hello Farm Friends! If you’re looking for a recipe to use your eggplant here’s a great one. This evening we’re eating spaghetti pasta and eggplant meatballs! I found the recipe on the Skinny Taste website. I made a few adjustments not intentionally but due to not having everything on hand. I almost doubled the recipe by using just barely over two pounds of Japanese Ichiban eggplant. “The Ichiban eggplant is favored for its sweet flesh that is creamy when cooked and pureed into dishes.” I didn’t have the Italian breadcrumbs so I made a substitute. The balls were not stiff enough to hold a “ball” shape so they were more like patties. I made a small amount of sauce from our tomatoes from scratch and added some store bought sauce to it. The eggplant meatballs were added to the sauce after they baked. I was going for a Keto meal but I did serve true pasta. I had a very small serving of pasta. While the pasta cooked I added hard salami to the sauce for a bit of meat for my family members who favor meat.
