You don't even need a food processor or to chop the beans for these vegan black bean burgers. They're full of flavor and great for making a quick and tasty meal.
Ingredients: 1 can 15 oz black beans, drained and rinsed. 1/2 cup breadcrumbs gluten-free if needed. 1/4 cup finely chopped onion. 1/4 cup BBQ sauce. 1 tsp smoked paprika. 1/2 tsp cumin. 1/4 tsp salt. 1/4 tsp black pepper. 4 burger buns. Lettuce, tomato, and your favorite toppings for serving.
Instructions: In a large bowl, mash the black beans with a fork until mostly smooth but with some texture remaining. Add breadcrumbs, finely chopped onion, BBQ sauce, smoked paprika, cumin, salt, and black pepper to the mashed black beans. Mix until well combined. Divide the mixture into 4 equal portions and shape them into burger patties. Heat a grill or a skillet over medium-high heat. Grease with a bit of oil or use a non-stick cooking spray. Cook the black bean burgers for about 4-5 minutes on each side, or until they are heated through and have grill marks or a golden crust. Toast the burger buns on the grill or in the skillet for a minute or two until they are lightly browned. Assemble your burgers with lettuce, tomato, and your favorite toppings. Serve hot.

A delicious vegetarian stir-fry featuring crispy tofu cubes coated in a savory General Tso's sauce with a medley of colorful vegetables. This dish is both flavorful and satisfying, perfect for a quick weeknight meal.
Ingredients: 14 oz 400g extra firm tofu, cubed. 1/4 cup cornstarch. 2 tablespoons vegetable oil. 3 cloves garlic, minced. 1 tablespoon ginger, minced. 1/4 cup soy sauce. 2 tablespoons hoisin sauce. 1 tablespoon rice vinegar. 1 tablespoon sugar. 1/2 teaspoon red pepper flakes adjust to taste. 1 cup broccoli florets. 1/2 red bell pepper, sliced. 1/2 green bell pepper, sliced. 1/2 cup snap peas. 2 green onions, chopped. Cooked rice for serving.
Instructions: Tofu can be pressed to remove extra water by placing it between paper towels and pressing it with a heavy object such as a cast-iron skillet for 20 to 30 minutes. Cut into cubes after that. Coat tofu evenly by tossing it in cornstarch. One tablespoon of vegetable oil should be heated on medium-high heat in a big skillet. When the tofu cubes are crispy and golden brown on all sides, add them and continue to cook. Take out the tofu and place it aside in a skillet. Add the remaining tablespoon of oil to the same skillet and saut the minced ginger and garlic until fragrant. Add red pepper flakes, sugar, rice vinegar, hoisin sauce, and soy sauce. Simmer for two to three minutes, or until the sauce begins to slightly thicken. Snap peas, broccoli, green bell pepper, and red bell pepper should all be added to the skillet. Stir-fry the vegetables for 34 minutes, or until they are crisp-tender. Put the crispy tofu back in the skillet and combine all the ingredients with the sauce. For complete heating, cook for a further two to three minutes. Present the Tofu Stirred General Tso's Add chopped green onions as a garnish and fry over cooked rice. Savor the General Tso's Tofu you made at home!
