Enjoy these crispy vegan falafels, packed with chickpeas, fresh herbs, and spices. Perfect for a quick and satisfying meal!
Ingredients: 2 cups cooked chickpeas. 1 small onion, chopped. 3 cloves garlic, minced. 1/4 cup fresh parsley, chopped. 1/4 cup fresh cilantro, chopped. 2 tablespoons flour such as chickpea flour or all-purpose flour. 1 teaspoon ground cumin. 1 teaspoon ground coriander. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 teaspoon cayenne pepper optional. 2 tablespoons olive oil for frying.
Instructions: In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, flour, cumin, coriander, salt, black pepper, and cayenne pepper if using. Pulse until mixture is well combined but still slightly chunky. Transfer mixture to a bowl and refrigerate for 30 minutes to firm up. After chilling, shape the mixture into small balls or patties. Heat olive oil in a skillet over medium heat. Fry the falafel balls or patties in batches until golden brown and crispy, about 4-5 minutes per side. Once cooked, remove falafel from the skillet and place on a paper towel-lined plate to drain excess oil. Serve hot with your favorite sauce or in a pita with veggies.

Instead of beef sliders, try these bean-and-vegetable sliders instead. They are both healthy and tasty. They taste great and are great for a quick and easy meal because they are full of black beans, vegetables, and spices.
Ingredients: 1 can 15 oz black beans, drained and rinsed. 1/2 cup finely chopped onion. 1/2 cup grated carrots. 1/2 cup finely chopped bell pepper any color. 1/2 cup rolled oats. 1/4 cup breadcrumbs. 1/4 cup grated cheddar cheese optional. 1 egg. 1 tsp chili powder. 1/2 tsp cumin. Salt and pepper to taste. Slider buns or small whole wheat buns. Lettuce leaves. Tomato slices. Sliced red onion. Ketchup and mustard for topping.
Instructions: In a food processor, combine black beans, chopped onion, grated carrots, and bell pepper. Pulse until coarsely chopped. Transfer the bean and veggie mixture to a bowl. Add rolled oats, breadcrumbs, grated cheddar cheese if using, egg, chili powder, cumin, salt, and pepper. Mix well until everything is combined. Form the mixture into small slider-sized patties. Heat a non-stick skillet over medium heat and lightly grease with cooking spray or oil. Cook the sliders for about 3-4 minutes on each side, or until they are golden brown and heated through. Assemble the sliders on buns with lettuce leaves, tomato slices, sliced red onion, and your choice of ketchup and mustard. Serve your delicious Bean-and-Veggie Sliders and enjoy!

Ingredients: 200g rice noodles. 2 cups vegetable broth. 2 cups water. 1 cup broccoli florets. 1 cup sliced carrots. 1 cup sliced bell peppers. 1 cup sliced mushrooms. 1 tablespoon soy sauce. 1 tablespoon sesame oil. 1 tablespoon rice vinegar. 1 teaspoon grated ginger. 1 clove garlic, minced. Salt and pepper to taste. Sesame seeds and sliced green onions for garnish.
Instructions: Boil water and vegetable broth in a pot. Add the rice noodles and cook them according to the directions on the package until they are soft. Set aside a different pan and heat the sesame oil over medium-low heat. Put in the ginger and garlic, and cook until the smell is nice. Put in the mushrooms, broccoli, carrots, bell peppers, and cook until the vegetables are soft. Add the rice vinegar and soy sauce and mix them in. Add salt and pepper to taste. After the noodles are done cooking, drain them and put them in bowls to serve. Put cooked vegetables on top of the noodles. Put green onions and sesame seeds on top to make it look nice. Enjoy while hot!
