There is no better egg salad ever! It's creamy, flavorful, and perfect for sandwiches, salads, or as a dip. It's a hit with everyone because it has hard-boiled eggs, mayo, Dijon mustard, and fresh veggies.
Ingredients: 6 hard-boiled eggs, peeled and chopped. 1/4 cup mayonnaise. 1 tablespoon Dijon mustard. 1/4 cup finely chopped celery. 1/4 cup finely chopped red onion. 2 tablespoons fresh parsley, chopped. 1 teaspoon white wine vinegar. Salt and pepper to taste.
Instructions: In a large bowl, combine the chopped hard-boiled eggs, mayonnaise, and Dijon mustard. Add the finely chopped celery, red onion, and fresh parsley to the bowl and gently mix everything together. Drizzle the white wine vinegar over the mixture and season with salt and pepper to taste. Stir to combine. Cover the bowl and refrigerate the egg salad for at least 30 minutes to allow the flavors to meld. Serve the Best Ever Egg Salad on a bed of lettuce, in a sandwich, or as a dip with crackers or vegetables. Enjoy!
