A creamy and indulgent twist on the classic carbonara, this shrimp spaghetti carbonara combines succulent shrimp with crispy bacon in a rich Parmesan and egg sauce, served over perfectly cooked spaghetti.
Ingredients: 8 oz spaghetti. 1 tbsp olive oil. 8 oz shrimp, peeled and deveined. 4 slices bacon, chopped. 2 cloves garlic, minced. 2 large eggs. 1/2 cup grated Parmesan cheese. Salt and black pepper to taste. Chopped parsley for garnish.
Instructions: Cook spaghetti according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water. In a large skillet, heat olive oil over medium heat. Add chopped bacon and cook until crispy. Remove bacon from skillet and set aside. In the same skillet, add shrimp and minced garlic. Cook until shrimp turns pink and is cooked through, about 2-3 minutes. Remove shrimp from skillet and set aside. In a bowl, whisk together eggs, grated Parmesan cheese, salt, and black pepper. Add cooked spaghetti to the skillet with bacon drippings. Toss to coat spaghetti with the drippings. Remove skillet from heat and quickly stir in the egg and cheese mixture. Toss until the spaghetti is evenly coated and the sauce thickens, adding reserved pasta water as needed to loosen the sauce. Return cooked shrimp and bacon to the skillet. Toss to combine with the spaghetti. Garnish with chopped parsley and serve immediately.
