They respond to, for example, wind frequency, insect buzzing vs insect chewing noises, and also the sounds made by other plants, which vary according to the activity of water transmission along the xylem. Attaching mics to plants, you get ultrasonic sound when there's more water, and audible sound when there's less (which makes bubbles).
