Invisible Apple Cake (Sweet Swaps!)
2 1/4 to 1/2 pounds (1 to 1.15kg) apples, such as Granny Smith or Golden Delicious
Juice of half a lemon
2 tablespoons (30 grams) unsalted butter, melted
2/3 cup (130 grams) granulated sugar
3/4 teaspoon kosher salt
3 large eggs
1 teaspoon (5 ml) vanilla extract or vanilla bean paste
1 cup (130 grams) all-purpose flour
1/2 cup (120 ml) milk, any kind
Powdered sugar, for dusting (optional)
Heat oven: to 375°F (190°C).
A very simple cake that had custard-like batter and apples. Perfect when Elain is feeling lazy but still wants to bake. We've all been there!
Peel, core and slice the apples as thin as possible. Toss with lemon juice and layer inside a parchment-lined tube pan.
In a large bowl, mix all the batter ingredients just until combined.

Pour the batter over the apples. Jiggle them so that the batter coats as many apples as possible.
Bake for 45 minutes. Dust with powdered sugar once cooled.
