Elderflower tea

Don't we just love a Summer Cold.?. Well I don't. I  want to get rid of it as soon as it comes. So, I decided to try Tizàn à lá Fleur de Sureau (Louisiana Creole for Elderberry Tea).  I read a lot of forum posts about elderflower tea and taking elderberry tonic for colds. I have a few elderberry plants growing in my backyard. They sprouted up after my husband cut down an elderflower tree last year to please the home insurer. I was not happy about it. Elderberry has been used for centuries to rid coughs and colds. It is safe during pregnancy but don't hold me to this. This is how I made my tea. It is rather simple. I took one small elderberry bunch from one stem of my elderflower tree. I rinsed it off with cold water as gently as possible. I placed the elderflower into a clean kettle with 2 to 2 1/2 cups of water. I placed the kettle lid on top and waited ten minutes. My gas range was set between medium high and high. Once the Tizàn à lá Fleur de Sureau, Elderflower tea was ready, I poured it carefully in a clean mug. I pour a little of Cane sugar into my elderflower tea and stirred. Now I am just sipping. If you want your elderflower tea dark in color, simply let your teas brew longer.

Side note: Did you know that Elderflowers were  used for a lot of Louisiana Creole Home Remedies? Elderflowers and Elderberries  have been used  to make Elderberry wine and Elderflower fritters. In France, Elderflowers were used to make Elderflower soap.

The elder tea has many names: devils eye, the elder mother, the queen of herbs and in 400BC Hippocrates called it his ‘medicine chest’ HOW TO Pour 350mls of boiling water over 2 heaped teaspoons of dried elderflowers or 4 heaped teaspoons fresh. Cover and allow to infuse for 5 minutes Strain and drink hot.  Save the rest and keep cool.
