I couldn't help myself... The last time I had a beef empanada, I cut it in half to admire the insides and it was love at first sight. The empanada was everything I strive for it to be... Full, juicy, with a wonderful beef to golden raisin/ sliced green olive/ hardboiled egg ratio, and seasoned to perfection. This was a tough choice, but the winner for my breakfast for this morning is... Roasted Veggies!!!! The leeks and the roasted eggplant really ties in the whole filling. It doesn't have dairy, but it does have a perfect balance of veggie flavors and textures...
