Endive savory cake with preserved lemon custard :: Still playing with endives and this morning I baked them in a cake. All their bitterness was gone and they ended up reminding me of pears (color, shape, and the way they moistened the cake). It was the first time I made a savory vegan cake (so far I only baked sweet vegan cakes) and I’m delighted with the result.
