Food yeast and fresh herbs give this gluten-free golden savory cake a lot of flavor. It goes well with soups and salads or can be eaten by itself as a healthy snack.
Ingredients: 2 cups almond flour. 1/2 cup tapioca flour. 1/4 cup nutritional yeast. 1 tsp baking powder. 1/2 tsp sea salt. 1/2 tsp black pepper. 1/4 cup melted coconut oil. 1/2 cup unsweetened almond milk. 3 large eggs. 1/2 cup chopped fresh herbs such as parsley, chives, and dill.
Instructions: Preheat the oven to 350F 175C. Grease a loaf pan with coconut oil and line with parchment paper. In a large bowl, whisk together almond flour, tapioca flour, nutritional yeast, baking powder, sea salt, and black pepper. In a separate bowl, whisk together melted coconut oil, almond milk, and eggs. Pour the wet ingredients into the dry ingredients and mix until well combined. Fold in chopped fresh herbs until evenly distributed throughout the batter. Pour the batter into the prepared loaf pan and spread it out evenly. Bake for 35-40 minutes, or until golden brown and a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing. Serve slices of the golden savory cake warm or at room temperature.
