Got my @tastefactory.2020 delivery of homemade ensaymadas. This one is their ube (purple yam) flavor which has ube filling. . My favorite is the plain cheese without filling (which I find too sweet). Ensaimada (Majorca, Spain, Catalan: Ensaïmada, Philippines: Ensaymada)
The Ensaimada is a Majorcan pastry that was made initially with flour, sugar, eggs, water and pork lard. In the Philippines, Ensaymada is a brioche type bread made with butter and topped with cheese and sugar.
History: The name of Ensaimada comes from the Arab word saïm which means pork lard and was then incorporated into the Catalan language. The first references about Ensaimada date back to the 17th century when the Archduke Luis Salvador of Austria spoke about them in his volumes Die Balearen but there is not a specific recipe. Ensaimadas traveled with Majorcan emmigrants to South and Latin America where today can have different variations, sugary and savory. In the Philippines, the Ensaymadas are often filled with ube, the purple yam paste and topped with queso de bola, a special type of cheese and often served with hot chocolate or coffee.
