So, I did a little "bacon" experimentation today. As someone who hasn't eaten meat in over 11 years, that smokey flavor was still something I craved (but not the actual bacon), and up until last year, that was being satisfied by soy bacon bits, in addition to other smokey things I like such as smoked cheese, smoked salt, smoked paprika etc etc etc.
But soy is now a big no-no for me (because my tumour was ER+), so not only are an awful lot of fake meats now off limits, so are the soy bits. So, I figure a little something I could sprinkle on a salad or toss in a sandwich was in order. I figured I'd post the recipes as well, because I seem to read a lot about some breast cancer ladies reducing the amount of meat in their diets, or they're just nice alternate recipes for vegetarians, or anyone I suppose. (btw, I am not pushing this kind of diet on anyone, to each their own. Breast cancer had nothing to do with why I gave up eating meat)
I made this first today (coconut "bacon" ). I'd actually had this same stuff in the restaurant mentioned in this recipe, Aux Vivres , when I visited Montreal a couple of years ago, so I figured it was worth a shot. I gotta tell ya, even though I overcooked it, this stuff was pretty good, and I can totally see having it on a salad or even putting some in a wrap for a sandwich. Will make again !
The second recipe I made was a seitan "bacon" . While the taste of this was pretty good, I think I also overcooked this one, because I made it too thin. Needs a little tweaking for it to come out looking just like bacon. Not bad though, taste-wise. Will make this again too. Seitan makes for a pretty good soyfood substitute and packs a lot of protein. And its not something I can easily buy around here, so I make my own.
