# 60/40 WHEAT/WHOLE SPELT
Last week we visited the wonderful lands of the region of Anoia and the beautiful mill of Josep Mestre Agriculture Ecològica. We bought his ancient flours, which are milled in a small stone mill. The flours, which are of ancient grains, have a color that differs from the other.The tastes, the smells, the colors are intense and powerful.
After this journey of flavors and colors, we came back home and we tried to make a bread using his wonderful whole spelt flour.
This Bread has a special flavour, the color of the crumb evokes the autumn and the rural life.
