My answer is, it depends?
I think that if she were living with in contact with Tony all these years, then absolutely she would trust Bishop, because Tony trusted her and took her under his wing. So I think that if Tony said Bishop was good people, then Ziva would absolutely trust her, because she trusts Tony implicitly.
If Ziva has been on her own all these years (which let's face it is the most likely story that the writers will choose), then I still think it would probably track. Because she also trusts Gibbs, and if Ellie is on Gibbs' team, then she must have passed his test, which would be good enough for her. Plus if she was watching Ellie from afar during this case, she'd see how devoted Ellie was to the case and to the victims, which she would recognize and admire. Plus the fact that she knew who Ellie was and could call her out by name seems to indicate that she got some insider info over the years.
So I guess I've just convinced myself that yes I can believe Ziva would trust Ellie even though she doesn't know her!
