SWEET VS SAVOURY
When it comes to food, Joe is the sort who prefers savoury over something sweet. Growing up in the Maghreb he was exposed to more savoury spices than sweet. Also, in the 11th century refined sugar wasn't a thing nor was sugar readily available like it is in modern times. Everything he ate would've been savoury and would've included spices like saffron, nutmeg, cinnamon, paprika, cloves, cumin, cayenne pepper, aniseed and black pepper. There were the occasional sweet things like oranges and figs, maybe even dates but they weren't what you would typically consider sweet. They were additions to the meal and to add some flavour to the rich meals that would've been his life. Even during his life with Andrew Underhill, their meals were more savoury than sweet, taking advantage of the local culture wherever they were stationed.
There are some exceptions, of course, and one of those just happened to be macarons. The sweets were created in the Renaissance and were things that Nicky introduced him to during their travels. It was something that quickly became a thing that Joe loved and would seek out whenever they were in a city with a bakery that provided international treats.. When they started to have buttercream, jam or ganache sandwiched between in the them in the 1930s he knew that he was in love with the sandwich treats. He has no particular favourite when it comes to flavours, but he does secretly enjoy coconut, orange and other fruit flavours, and will never turn them down should they be offered. Unfortunately, they also tend to be used as blackmail, mostly by Nicky, because of his weakness for them.
it’s so incredibly exhausting: constantly looking over your shoulder, the dirty money, the drugs. the lifestyle is really starting to take its toll on Max and it’s become apparent in the way he carries himself. the dark circles under his eyes and his constant mood swings are just the tip of the iceberg, but the fact that he now owns a gun really takes the cake. this isn’t how he imagined his life to be. this isn’t where he was supposed to end up.
the loneliness he continuously basks in is painful. with no family ties or real friends, he turns to the only person who has yet to betray him; a man who came into his life at just the right time. “ I just--- I just don’t know what the fuck to do anymore. ” he looks to Nicky, finding solace in the man’s presence. “ I've been doing this for so long that I don’t know how to get out of it. ” a pause. “ I don’t even think there’s a way out. ”

seriously, he digs his frown all the way to shar pei town deep, borrowing a pretentious white-collar downturn to his entire being that starts with an always-wilt at the mouth.
he feels the tick in nicky’s cheek incoming like his own. and like his own, he doesn’t acknowledge it.
underneath the tail of nicky’s suit jacket, it’s snug. joe’s been here many times before. he straps the last gun to go at the valley of nicky’s spine, as discreet as a pat-down. the unending mirror on nicky’s six shows no bump, just them, shiny-shoe-to-shiny-shoe.

from the front, he gives the waist holster a rough tug. it gets his toes stepped on.
joe’s reflection barks out a laugh crinkling around itself.
he tucks the ghost centimeters of nicky’s hair behind his ear as if they’re still there and tickling right into his lashes when he leans over blackletter too keenly. joe pulls at his earlobe, mimicking the chunky drag of silver.
