Mango Mint Granita

Blend 1 cup of cubed mango, 1/3 cup of water, and the juice of half of a lime. Pour into a pie pan. Top with chopped mint leaves. Put in the freezer and scrape the top layer with a fork every 30 minutes to create little frozen crystals for about 3 hours. Enjoy while sitting outside taking in some vitamin D. Lounging by the pool?...add some champagne for a light refreshing summer cocktail! But remember to stay hydrated! 

You can have fun with this recipe with multiple fruit and herb combinations. Try Strawberries and Basil next time!
