Ryerson University’s magazine had a mention of Mena Massoud’s new book Evolving Vegan: Deliciously Diverse Recipes from North America’s Best Plant-Based Eateries—for Anyone Who Loves Food (2020).

According to the book’s description on Goodreads, Evolving Vegan is “a collection of diverse, delicious, and accessible vegan recipes inspired from dishes all over the world.” Some recipes include “sausage shakshuka* in a skillet,” “young coconut ceviche,” “BBQ pulled ‘pork’ jackfruit sandwiches,” and “Indian tofu curry.”

*Shakshuka is a popular dish in North Africa (Egypt included) and the Middle East. Generally it is vegetarian, being “made with eggs that are gently poached in a simmering mixture of tomatoes, bell peppers, onions, and garlic” (source). I imagine the vegan version is sans eggs?

If you want a vegan Egyptian dish, try foul (ful) mudammas (Egyptian fava beans). This one is my favourite.
