With these exquisite madeleines, enjoy the delicate flavor of matcha green tea. The subtle bitterness of matcha combined with the classic madeleine texture results in a delicious treat.
Ingredients: 2 eggs. 2/3 cup granulated sugar. 1 cup all-purpose flour. 1 teaspoon matcha green tea powder. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/2 cup unsalted butter, melted and cooled. 1 teaspoon vanilla extract. 1 teaspoon honey. Powdered sugar, for dusting.
Instructions: Set the oven to 350F 175C and heat it up. Grease and flour a mold for making madeleines. Beat the eggs and sugar together in a bowl until the mixture is pale and a little thicker. Add the salt, baking powder, matcha powder, and flour all at once. Mix the dry and wet ingredients together slowly until they are just combined. Put the honey, vanilla extract, and melted butter in the bowl. To make the batter smooth, fold it in half. Put the bowl in the fridge for at least 30 minutes with plastic wrap over it. Fill up each madeleine mold about three quarters of the way to the top with batter after it has been prepared. After the oven is hot, bake the madeleines for 10 to 12 minutes, or until the edges are golden and they bounce back when you touch them. Once the madeleines are done, take them out of the oven and let them cool in the mold for a few minutes. Then, move them to a wire rack to cool completely. After the madeleines have cooled, sprinkle them with powdered sugar.
