PLEASE may I have the panera broccoli soup recipe that sounds magical
absolutely, let’s do this
shit you need:
half an onion
roughly 1 1/2 cups broccoli florets (that’s the top part), but honestly I’d recommend just throwing in as much as you can
roughly a cup of shredded carrot but, again, the more the merrier
1 stalk of celery. this one isn’t up for debate, if you use more than one stalk this becomes celery soup feat. minor cameos by broccoli and cheddar. I have made this mistake so that you don’t have to.
1 tbsp butter
1/4 cup of MELTED butter
1/4 cup of flour
2 cups milk
2 cups stock (chicken is better but veggie is fine)
2 1/2 cups cheddar cheese but I usually add at least another half cup
salt & peppy to sprinkle in at the end
what you with the shit:
personally I recommend starting by doing all the veggie prep. dice that onion, chop up the broccoli, slice that celery real thin, and shred up those carrots. I prefer to use a grater for the latter, but if you don’t have on just cutting them up matchstick style is peachy.
once you’ve got everybody sliced and diced melt that tbsp of butter in a pan over medium high heat and saute your onions in there. when you’re done with that set ‘em aside for a bit, they’re a surprise tool that will help us later.
get a large saucepan over medium low heat - and I cannot emphasize this enough, you want a BIG pan.
once it gets warms up whisk the melted butter and flour together. you have to be on this pretty constantly or it’s all going to burn to the bottom of your pan.
as soon as it’s mixed add the milk and chicken stock.
this is where the waiting game starts: bring it down to a simmer and let it sit there for about 20 minutes, until it starts getting thick.
then you add in the veggies (this is what the onions were for, sorry it wasn’t actually much of a surprise) and let it simmer for ANOTHER 20 MINUTES.
did I mention that this isn’t a great recipe to make if you’re already very hungry, given that it takes like an hour? you’ve got to set aside time for this badboy. if you’re already hungry and craving hot broccoli and cheese fast just make a flatbread or something.
anyway once your vegetables have been simmering for 20 minutes you can go ahead and add the cheese and sprinkle in some salt and pepper to taste.

I’d wake up and get sweet potato pancakes from the diner by my house, then I’d come home and curl up under a blanket and take a nap. After lunch I’d go thrift shopping, then read in the window of a coffee house while it rains. I’d finish the day with a big dinner and watch an old rom com :))

what do i do at the end?? when school starts up its going to be a year of lasts- last freshers last essay last time seeing a lot of my closest friends, how do i go through the year without getting overwhelmed by how much things are chaning but also not lose any of the experiences because im too busy thinking about when they'll be over? also kinda how do you plan for what you'll do after uni and not being afraid of opportunities but i think this will be what worried me more
I’m such a sentimental person so I was so worried I’d be a puddle of tears all of senior year. Granted, I’m sure if my last couple months hadn’t been online I would have been a lot more emotional during all those “lasts” (I skipped my last two classes ever because I was so ready to leave for spring break ://) but I did a lot better at staying in the moment than I thought I would.
Make a bucket list with your friends of all the things you’ve been saying you wanted to do but never got around to. Be intentional about spending time with people and creating memories. At this point, you’re graduating. You’ve almost made it. You can afford to slack off a little in exchange for spending more time with your friends.
And remember that even though a lot of things are ending, even more is beginning!! When I graduating high school I wished I could freeze time. But now I realize that college was 100x more amazing than hs, so whatever’s coming next will be the same.
After you graduate, be intentional about staying in touch with your closest friends. Just because you don’t see each other everyday anymore doesn’t mean you have to grow apart. Check in on them a couple times a week; schedule a monthly group zoom call; keep them in the loop when you get a job/partner/dog. If you can, plan a weekend in the fall where you’ll all meet up somewhere central so when you leave campus you know you’ll see each other again soon.
As for planning what you’ll do -- it’s definitely scary. But you can do it!! Lean on your support system -- friends, family, professors, advisors. Get all the advice you can. Apply for anything that interests you. If you’re overwhelmed, know that nothing is permanent. If you pick a job and hate it you can change. If you don’t get your dream job right away, you’re still so young and have so much time.
