Barbecued Chicken And Vegetable Skewers on Salsa
Ingredients
180g raw chicken breast, chopped
1/2 green capsicum, chopped
1/2 red capsicum, chopped
5 button mushrooms
1/3 brown onion, chopped
2 garlic cloves, crushed
2 tbsp. fresh lemon juice
2 tsp. turmeric
2 tsp. dried rosemary
Tomato Salsa
1/2 tomato, diced
2 shallots, chopped
1 cup spinach leaves, chopped
1 tbsp. olive oil
1 tbsp. balsamic vinegar
Method
To marinate the chicken breast: Add the chicken breast, garlic, turmeric, Himalayan salt, pepper, and rosemary in a bowl and combine. Refrigerate for 1/2 hour to set
Once refrigerated, using skewers, thread a chicken piece, onion, red capsicum, green capsicum, and mushroom (in that order) on the skewers and repeat until all the vegetables have been used
Heat a barbecue grill over medium heat and cook the chicken skewers on the barbecue for 5 minutes on each side or until cooked in the middle. Drizzle lemon over the chicken skewers
Meanwhile, add the shallots, spinach, and tomato in a bowl and dress the salsa in olive oil and vinegar
Transfer the salsa to a plate and place the cooked skewers on top
Serve
