These Chicken Fajita Kabobs are marinated in the BEST fajita marinade, resulting in flavorful and tender skewers with a perfect balance of chicken and colorful bell peppers. A fun and delicious twist on traditional fajitas!
Ingredients: 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes. 1 red bell pepper, cut into 1-inch pieces. 1 green bell pepper, cut into 1-inch pieces. 1 yellow bell pepper, cut into 1-inch pieces. 1 onion, cut into 1-inch pieces. 1/4 cup olive oil. 2 tablespoons lime juice. 2 tablespoons fajita seasoning. 1 teaspoon minced garlic. Wooden skewers, soaked in water for 30 minutes.
Instructions: In a bowl, whisk together olive oil, lime juice, fajita seasoning, and minced garlic to make the marinade. Place chicken cubes in a zip-top bag and pour the marinade over them. Seal the bag and refrigerate for at least 1 hour, or overnight for best results. Preheat grill to medium-high heat. Thread marinated chicken, bell peppers, and onion alternately onto the soaked wooden skewers. Brush the kabobs with any remaining marinade. Place the kabobs on the preheated grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
