Lesso Rifatto con #Cipolle at #LaCasalinga in #Firenze. This is a serious# braise of a super tough thigh muscle on the cow. A cut that almost completely turns to jelly when you go super long and slow. The real treat here however was how the meat played off against the big chunks of onions and tomatoes braised with it. It was truly a symphony of softness and slight resistance with deep earthy beef bouncing off sweet onions. Il #Duomo di #Parma #Italia Parma was truly a #dream. I've been before years ago but not with such great guides. As expected the #Prosciutto, #Culatello and #Parmigiano were amazing, and it was great to dig into another micro regional translation of the Tortelli, Anolini and Mezze Maniche. Italy is truly the gift that keeps giving for chefs.
