Ingredients: 8 oz pasta of your choice. 2 tablespoons olive oil. 4 cloves garlic, minced. 4 large portobello mushrooms, sliced. 1 cup mascarpone cheese. 1/2 cup grated Parmesan cheese. 1/2 cup chopped fresh parsley. Salt and pepper to taste.
Instructions: Follow the directions on the package to cook the pasta until it is al dente. Remove the water and set it aside. Warm up the olive oil in a big pan over medium-low heat. Put in the minced garlic and cook for one minute. Put sliced portobello mushrooms in the pan and cook for 5 to 7 minutes, until they release their water and get soft. Turn down the heat and mix in the mascarpone cheese until it melts and is smooth. Toss the cooked pasta in the creamy sauce after adding it to the pan. Grate some Parmesan cheese and chop up some parsley. Add pepper and salt to taste. If you want, you can serve it hot with extra Parmesan and parsley on top.
