These vegan popsicles combine the tartness of blackberries with the sweetness of maple syrup and the creaminess of coconut milk for a delightful frozen treat.
Ingredients: 2 cups blackberries. 1/4 cup maple syrup. 1 can 13.5 oz full-fat coconut milk. 1 teaspoon vanilla extract. 1/4 cup almond milk.
Instructions: In a blender, combine blackberries and maple syrup. Blend until smooth. In a separate bowl, whisk together coconut milk, vanilla extract, and almond milk. Layer the blackberry mixture and coconut milk mixture into popsicle molds, alternating between the two. Insert popsicle sticks and freeze for at least 4 hours or until solid. To remove popsicles from molds, run under warm water for a few seconds and gently pull out.
