Ingredients: 1 1/2 cups gluten-free all-purpose flour. 1 cup granulated sugar. 1 1/2 teaspoons baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup unsweetened almond milk. 1/2 cup vegetable oil. 2 large eggs. 2 teaspoons pure vanilla extract. 1/2 cup dairy-free butter, softened. 2 cups powdered sugar. 1 teaspoon pure vanilla extract. 2-3 tablespoons unsweetened almond milk. Food coloring optional.
Instructions: Preheat oven to 350F 175C. Line a muffin tin with cupcake liners. In a large bowl, whisk together gluten-free flour, granulated sugar, baking powder, baking soda, and salt. Add almond milk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until well combined and smooth. Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove cupcakes from the oven and let them cool completely on a wire rack. To make the dairy-free buttercream, beat softened dairy-free butter in a mixing bowl until creamy. Gradually add powdered sugar, vanilla extract, and almond milk, beating until light and fluffy. Add more almond milk if needed to reach desired consistency. If using food coloring, divide the buttercream into separate bowls and tint each with desired colors. Once the cupcakes are completely cooled, frost them with the dairy-free buttercream using a piping bag or offset spatula. Decorate as desired and enjoy!
