Split Chicken with Onions

There are several ways to cook a whole chicken quickly (see, for example, the fast bake chicken recipe). One of them is to split the backbone of the chicken and flatten the bird, thus exposing more surface area of the bird to the oven heat. This version uses a big pile of onions which sweeten and partly caramelise during cooking to make a delicious accompaniment.

1 whole chicken, cut through the backbone and flattened out (don’t cut the breast side)

50gm butter

2 or 3 onions, peeled, and sliced

salt and pepper

Put the onions into a large baking dish and sprinkle a little oil over them. Place half the butter, cut into small pieces, on top of the onions. Put the flattened chicken on top of the onions and dot with butter, then sprinkle with salt and pepper.

Cook in a 180C oven for as long as needed (time depends on the size of the bird). For example, the bird I cooked (see photos below) was nearly 3kg and took an hour to cook.

Serve with onions and juices to accompany.
