Apples and cinnamon whipped cream early in the morning? Yes. That just happened, and I didn’t mind at all as the cream is made out of the bean water (aquafaba) from chickpeas, vegan sugar, cinnamon and cream of tartar. Having been refrigerated overnight post being made last night using only a whisk, I’d say the cream held up pretty well. The taste is nice, it’s very light, and the cinnamon with the apples reminds me of the days my grandmother would cook apples with cinnamon upon the stovetop, then pour them over toasted bread for a warm tasty treat. 😍 I am definitely going to make chickpea whipped cream again post purchasing a handheld mixer so that I can achieve the consistency I am looking for - perhaps using vanilla bean next round as real vanilla bean is one of my favs when it comes to flavors... 😆 What are some of your favorite ways to use chickpeas?
