Ingredients: 1 can black beans, drained and rinsed. 1 can kidney beans, drained and rinsed. 1 can pinto beans, drained and rinsed. 1 can cannellini beans, drained and rinsed. 1 can chickpeas, drained and rinsed. 1 onion, diced. 3 cloves garlic, minced. 1 red bell pepper, diced. 1 green bell pepper, diced. 1 jalapeno pepper, minced. 1 can diced tomatoes. 2 tablespoons tomato paste. 2 cups vegetable broth. 2 tablespoons chili powder. 1 tablespoon cumin. 1 teaspoon paprika. 1 teaspoon oregano. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: In a large pot, heat olive oil over medium heat. Add onion, garlic, and peppers. Cook until softened, about 5 minutes. Stir in chili powder, cumin, paprika, and oregano. Salt and pepper to taste. Burger buns and toppings of your choice.
Instructions: In a small bowl, mix ground flaxseed with water and let it sit for 5 minutes to form a gel-like consistency, creating a flax egg. In a large mixing bowl, mash cooked lentils with a fork or potato masher. Add breadcrumbs, chopped onion, bell pepper, minced garlic, prepared flax egg, soy sauce, smoked paprika, cumin, salt, and pepper to the mashed lentils. Mix until well combined. Divide the mixture into equal portions and shape them into burger patties. Heat a non-stick skillet over medium heat.
