Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 1/2 cup brown sugar. 1/2 cup pumpkin puree. 1/2 cup brewed coffee, cooled. 1/4 cup vegetable oil. 1/4 cup milk. 1 egg. 1 1/2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/4 tsp ground cloves. 1/4 tsp salt. Nutella for filling.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a large mixing bowl, whisk together the pumpkin puree, brewed coffee, vegetable oil, milk, and egg until well combined. In a separate bowl, combine the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. Fill each muffin cup halfway with the muffin batter. Place a small spoonful of Nutella in the center of each muffin cup, then top with more muffin batter to cover the Nutella. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the muffins comes out clean.
