This Vietnamese Spring Rolls Stirfry is a fresh and flavorful dish that combines the vibrant flavors of traditional spring rolls with the convenience of a stir-fry. It's perfect for a quick and healthy meal.
Ingredients: 200g rice vermicelli noodles. 12 rice paper wrappers. 200g cooked shrimp, peeled and deveined. 1 cup fresh bean sprouts. 1 cucumber, julienned. 1 carrot, julienned. 2-3 lettuce leaves, shredded. Fresh mint leaves. Fresh cilantro leaves. 4 cloves garlic, minced. 2 tablespoons vegetable oil. 1/4 cup hoisin sauce. 1/4 cup soy sauce. 1 tablespoon fish sauce. 1 tablespoon lime juice. 1 tablespoon sugar. 1/2 teaspoon chili paste optional. Warm water for soaking rice paper wrappers.
Instructions: Cook rice vermicelli noodles according to package instructions, drain, and set aside. In a small bowl, mix hoisin sauce, soy sauce, fish sauce, lime juice, sugar, and chili paste if using. Set aside as dipping sauce. Heat vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and stir-fry for 30 seconds until fragrant. Add shrimp and stir-fry for 2-3 minutes until they turn pink and opaque. Remove from skillet and set aside. In the same skillet, add julienned carrot and cucumber. Stir-fry for 2-3 minutes until slightly tender but still crisp. Remove from skillet and set aside. Soak one rice paper wrapper in warm water for a few seconds until it becomes pliable. Place it on a clean surface. On the bottom third of the wrapper, place a small portion of cooked rice vermicelli noodles, shredded lettuce, bean sprouts, julienned carrot and cucumber, mint leaves, cilantro leaves, and 2-3 cooked shrimp. Fold the sides of the rice paper wrapper over the filling, then fold the bottom over and roll tightly into a spring roll. Repeat with remaining wrappers and filling.
