The grilled pork tenderloin, bacon, and homemade spicy and tangy fig sauce in these Pork Tenderloin Buns go so well together. This burger tastes great with the fig sauce, which makes it a great choice for a gourmet burger night.
Ingredients: 2 pork tenderloins about 1 lb each. 4 hamburger buns. 2 cups fresh figs, chopped. 1/2 cup red onion, finely chopped. 1/4 cup apple cider vinegar. 1/4 cup brown sugar. 2 tablespoons Dijon mustard. 1 teaspoon crushed red pepper flakes. Salt and pepper, to taste. 4 lettuce leaves. 4 slices provolone cheese. 4 slices bacon, cooked until crispy.
Instructions: Preheat your grill to medium-high heat. Season the pork tenderloins with salt and pepper. Grill the pork tenderloins for about 5-7 minutes per side, or until the internal temperature reaches 145F 63C. While the pork is grilling, make the fig sauce. In a saucepan over medium heat, combine the chopped figs, red onion, apple cider vinegar, brown sugar, Dijon mustard, and crushed red pepper flakes. Stir well. Simmer the sauce for 10-15 minutes, or until it thickens and the figs become tender. Season with salt and pepper to taste. Remove the pork from the grill and let it rest for a few minutes before slicing it thinly. To assemble the burgers, place a lettuce leaf on the bottom half of each hamburger bun. Top with a slice of provolone cheese, sliced pork tenderloin, and a spoonful of the spicy and tangy fig sauce. Add a crispy bacon slice on top of the sauce.
