Ingredients: 2 medium sweet potatoes, cubed. 1 can 15 oz black beans, drained and rinsed. 1 red bell pepper, sliced. 1 yellow bell pepper, sliced. 1 onion, thinly sliced. 2 cloves garlic, minced. 2 tablespoons olive oil. 2 tablespoons soy sauce. 1 tablespoon maple syrup. 1 teaspoon ground cumin. 1/2 teaspoon chili powder. Salt and pepper to taste. Fresh cilantro for garnish optional.
Instructions: In a large skillet, heat olive oil over medium heat. Add minced garlic and sliced onion. Cook until onion becomes translucent. Add cubed sweet potatoes to the skillet.
