So after feeling like garbage for more than two weeks, my usual energy level was back today! Started out with church service with the family and then assisted the hubby as he taught the 3rd grade class at Sunday school. He is such an awesome teacher with those kids. Next it was home for lunch (leftovers - yay). After that, Matt had an appointment so the kids and I packed up and went to the rec center to get some exercise. Driving there, I realized that I'd hardly been there this year. I always wait for the New Year's rush to die down a little and then I got hit with those menacing Shingles... Oh well, I was there today. That's what counts. I swam hard for 40 minutes and then goofed off with the kids for 20 or so. I then headed home to make food for the family this week. Items on the menu tonight were: Hungarian stew, meatloaf, chicken curry, brussels with bacon, chicken apple sliders, spicy potatoes, and some hard boiled eggs for them to snack on. (See Instagram post earlier tonight for the evidence). It is so much easier to go into the week knowing that the chances of them running out of healthy food while I'm gone is very low. I taste tested everything and it's all great. Several of this week's recipes are from my handy dandy Everyday Paleo Family Cookbook. If you need an easy to follow book, it's one of the best.
